What I love most here is anything about cooking ducks and how to get rid of its slimy odor by putting strands of lemon grass.
Best practices on duck production is the town of San Mateo, which is now popular of its “PAGATASAM”, a delicacy of cooking whole dressed duck in water until tender and further cooked in coconut milk extract or “gata” seasoned with salt and ginger.
“PAGATASAM” simply means ginataang pato. Savor its heavenly taste and figuratively “forget your name” after taking a bite on this. IT’S MORE FUN IN SAN MATEO, ISABELA with its “PAGATASAM“!!!
